Carrots, not just for cartoon rabbits (recipe)

Carrots are one of the vegetables that are available pretty much all year round and are an extremely versatile part of any kitchen.

Traditionally featuring in the English ‘meat and two veg’ combo of many wholesome Sunday Roasts, they are equally at home cut into batons along with healthy lunchtime hummus.

Carrots are a great source of Vitamins A, C and K and also contain lots of potassium and dietary fibre along with plenty of antioxidants.

The old myth about eating them to see in dark is not as ridiculous as you might think as the beta-carotene they contain is great for eye-health generally and night-vision specifically. This will also fight off cataracts and macular degeneration in old age!

If stored well these vegetables will last and they’re best kept in the fridge.
